Because I have been slacking...

I have been out of town, busy at the pumpkin patch, fall festivities and a bunch of other stuff SOOOO I am writing a post that includes three new recipes!!! :) YAY!! They include Cabbage rolls (don't gag they are not gross.. promise!) , Cauliflower cheesy hash, and chicken stuffed sweet potatoes..all very healthy and all very fall :)

Puerta Vallarta

Bliss.. pure bliss I tell ya.

We did NOT want this vacation to ever end.. in fact it was the best five days we have spent together in a long while. I am not trying to be sappy/annoying its true!!! The honeymoon always holds so much pressure from the aftermath of the wedding.. I think I was still stressed from the wedding that I didn't full enjoy my honeymoon. Now a year later.. I was set and ready to go on this romantic weekend with my man. We slept 14 hours each night.. which was an amazing change from our usual 5 AM wakeup call. We sauntered down to the breakfast cafe ate leisurely breakfasts each day while drinking our coffee ( well while I was drinking my coffee). The FOOD. WAS.UNBELEIVABLE. like If I didn't have self control I could have possibly gorged myself on all of the deliciousness that was set up in front of my eyes. But I did contain myself..kindof. After our usual breakfast of eggs, chorizo, and papaya...we went down to the beach. Brandon wanted to go straight to the mini bar but I needed to remind him each day that it was only 10 AM and that maybe we needed to wait until at least 11. :) So we went down to the beach..me with my book in tow and brandon with a pout (he didn't understand the point of the beach when there was a pool with  mini bar ..) we layed in front of the water. No talking or anything..just appreciating the sound of the ocean while I read my book. It was nice... THEN we were ready for a Mojito so off to the pool bar we ran. The weather was beautiful, the sun was shining, and the tequila was STRONG :) We spent the majority of our day lounging in the cabana sipping minty mojitos and making friends with random Canadians, Londoners, and Cubans. When we were finished with our day at the pool it was up to shower change and get ready for dinner. Our resort had five restraunts: four of which we visited while we were there- Mexican, Seafood, Steak, and the Buffet  for breakfast and lunch. My favorite was the Mexican food. Unlike our honeymoon experience, this resort had the Mexican food down PAT. I enjoyed the chips and salsa.. the meat kabobs alongside a charred pineapple..everything was so yummy. Brandon and I will take many many vacations together in our lifetime..although the future vacations may involve kids after this trip! HA! I have a bucket list of places I want to visit with my husband..and although it will take years to complete them all it is so fun to talk and dream and plan these types of get aways. I love spending time with my Brandy and cannot wait for fun future trips alone and with family!!!!

here are a few pictures from our wonderful Vacation.

Happy Anniversary

I cannot believe its here! October, My favorite fall month with the cool weather and yummy pumpkin desserts and of course my newly favorite addition..my anniversary. I have hardly blogged ANY recipes or COOKED much for that matter due to the fact that I am busy with my pre-k kids at school ( Oct. is filled with pumpkin patch adventures, fire safety, zoo trips and a bunch of other stuff..LOVE IT) have started a new bible study, planning a shower, AND packing for my Puerto Vallarta vacation with my husband to celebrate our first year together.  Year 2015 is going to be so amazing! I just seriously cannot believe how fast time flies.. I blinked and a year happened :( I am truly very proud of myself. This past year was hard for me as transitions, change, and unexpected things reared their ugly heads as I was trying to adjust to my new role as wifey.  I learned to lean on God instead of others, I started a new job which I absolutely love, have grown to appreciate both the ups and downs of marriage, learned to save money (this is big for me..I LOVE TO SPEND) and have honestly just embraced this amazing chapter of life that my husband and I started together. Year 2015 is going to be absolutely amazing..but year 2014 was so special to me as it taught me to spiritually grow in my faith, believe in myself, and figure out what this whole marriage thing was about. It was a great year and I am blessed.  Here are some pictures from our first year of marriage

This day was just the beginning..The fancy glamour of a wedding is nothing compared to the true life you live with your husband. I feel so proud of the two of us and love him more than he will ever know!!! (sappy I know)!! Our faith has been tested, we have had the best times and some that are not so good, we have enjoyed the hell out of some wine, gone on trips, bought a house, remodeled our house, graduated, gotten promotions, gotten new jobs, found an amazing church,  made some of the best friends we could ask for, and really and truly made a life here together. I would not change this life for anything :) To my husband who reads my blog every day- I love you so much!!! Thank you for everything.
