Veggie bites for Baby

Happy Hump day Friends!

I am so excited to share this recipe with y’all!! It was incredibly easy, baby could easily eat it with tiny fingers, and very healthy!!!

The wonderful thing about this recipe is that you can totally mix and match the veggies in it. I started with a spinach kale mix but you could also throw in broccoli, zucchini, or another veggie of choice. I will change it up next time to see what J thinks about it:)

SHOPPING LIST

3/4 cup of frozen spinach and kale
2 cups of water
1/2 cup mozzarella cheese
1 large egg
1/4 cup plain breadcrumbs
2 tablespoons canola oil
s&p to taste ( optional)

Procedure

1. Chop spinach and Kale into small pieces. Cover with water in a saucepan and bring to a boil. Cook for 10 minutes, or until it is softened and tender. drain and let cool; then either puree in a food processor or fork mash- ( I recommend pulsating in your baby bullet or food processor until it is the consistency that you can shape with your hands)
2. Grate the mozzarella, and mix it with the cooked mashed broccoli. Pour in a beaten egg and mix to combine
3. Tightly mold a small ball of spinach/kale and cheese with your hands. roll it in the bread crumbs to cover and place on a plate.
4. Heat oil in frying pan. when hot, carefully place the balls into the pan. Fry for 1-2 minutes; turn over with a spatula. Let fry for another 1-2 minutes; turn over again. they are cooked when all sides are browned. ( option-not into frying? Thats okay! Preheat your oven to 375 and bake for 15 minutes!)
5. Serve to baby once they are cooled!!!
